Antoine Mora

Antoine Mora, a renowned olive grower, has been a loyal partner of Oliviers&Co for over 20 years. At the same time producer, miller and confectioner of table olives, this lover of olives and his region knows his orchards by heart. Every day, he walks through and looks after the olive trees planted by his ancestors.
From his orchard, the Mas du Petit Goudègues, near Maussane-les-Alpilles, his olive oil is an example of the smoothness and elegance that perfectly characterises this prestigious appellation.
The estate is divided between the Baux-de-Provence valley, the Durance, the Alpilles and the Crau plain, and its olives are then pressed at the "La Cravenco" mill, which means "Daughter of the Crau" in Provençal. The soil of this region is poor and chalky, and only almond trees, vines and olive trees grow there. Antoine's trees are over 65 years old and have deep roots to draw the trace elements they need.
Located in Fontvieille, in the Baux-de-Provence region, the La Cravenco mill produces olives in full respect of the know-how, combining traditional mechanical processes with state-of-the-art technological tools.
Antoine's favourite moment?
"My favourite moment is when we receive the new oil. I bring it down here to the house, with my family and the children to taste it together. First the bouquet, then we look for the aromas, the ardour, the bitterness and then the complex aromas. Everyone expresses their feelings! The Vallée des Baux, it is especially the taste of apple, almond, artichoke, tomato leaf. Everyone will give their opinion, my favourite moment is this, this moment with the family."
