Balsamic vinegar is a traditional condiment used in Italian gastronomy. Unlike other vinegars, which are made from the fermentation of wine, it is made by cooking grapes (and vinegar) that is then left to age in wooden barrels for several months to several decades. Balsamic vinegar is characterised by a sweet and sour flavour, and a syrupy texture. The younger a balsamic vinegar is, the more liquid and acidic it will be. The older it gets, the thicker its texture, the sweeter its taste and the more complex its aromas, becoming a balsam, hence the name "balsamic".
Balsamic vinegar offers more than just culinary appeal—it's also packed with health benefits. From regulating blood sugar levels to promoting heart health and providing antioxidant protection, balsamic vinegar can be a valuable addition to a balanced diet. By incorporating balsamic vinegar into your meals, you can enjoy its delicious flavor while reaping the numerous health rewards it has to offer.
The art of crafting balsamic vinegar begins with a meticulous selection of grapes, primarily trebbiano and lambrusco varieties, renowned for their sweetness and nuanced flavors. These grapes, harvested at the peak of ripeness, undergo pressing to extract their juice, known as "must." All our balsamic vinegars have no added caramel or colorants.
Incorporating balsamic vinegar into your recipes can elevate the flavors of your dishes to new heights. The traditional balsamic vinegar of Modena is made exclusively from grape must: meaning the only sugars it contains are all naturally present in the grapes (calorific intake 284 kcal/100ml). Balsamic vinegar of Modena may also contain a small quantity of wine vinegar in addition to the grape must: in this case the wine vinegar also only contains the sugar present in the vinegar alcohol.
