Ingredients

Lemon Olive Oil
Honey & Ginger Specialty Vinegar
Salt & Herbs Mix for Fish

At the market
3 cod fillets
2 zucchini
1 bunch spring onions
3 large tomatoes
1 lemon
Sesame seeds

Directions

Cut the tomatoes into slices. Peel and finely dice the zucchinis. Chop the spring onion stalks. Cut the lemon into slices.

In a small bowl, add 4 tbsp of lemon olive oil, 3 tbsp of honey & ginger vinegar and 1 tsp of salt & herbs mix. Mix to create a marinade.

Dip the cod into the marinade. Cover with cling film and chill for 30 minutes.

Preheat oven to 392°F.

Drain the cod, reserving the marinade.

Place the diced zucchini and tomato slices on a sheet of parchment paper. Add the cod. Arrange the lemon slices and spring onions on top. Drizzle with marinade.

Close the foil and place in the oven for 20 minutes.

Garnish with a few sesame seeds.
