About This Recipe

Here is a delicious dish to celebrate the new season. You can choose from any kind of pasta and mix up your vegetables to make this dish truly your own.

Ingredients

Extraverte Olive Oil
2 tbsp Salt & Herbs Mix for Pasta and Salads

At the market
1 bunch broccolini
16 oz fusilli
4 tbsp unsalted butter
1 garlic clove, finely minced
1 fennel bulb, minced
1 onion, finely chopped
1 cup frozen peas, thawed
1 tbsp lime juice
Grated Parmesan cheese

Directions

In a saucepan of boiling salted wated, cook the broccolini until tender, about 1 minute. Using tongs, transfer them to a cutting board and chop coarsely.

Boil pasta until al dente. Drain reserving 1 cup of cooking water.

In a deep skillet, melt the butter in 3 tbsp of olive oil. Add the garlic, fennel, onion, peas and broccolini. Cook over medium heat until tender-crisp, about 6 minutes.

Add pasta, lime juice and cooking water. Season with salt & herbs. Cook over medium heat until water is almost absorbed.

Drizzle with olive oil and sprinkle with grated Parmesan cheese.
