A recipe for prawns that will take you on a journey. Mango, combined with ginger, adds sweetness and freshness to this delicious starter.

Lime Olive Oil
Intense Ginger Specialty Vinegar
At the market
12 shelled and deveined prawns
1/2 tsp lime zest
5.3 oz mango
2 tbsp coriander
Directions
Dice the mango. Cut the prawns into small pieces about 0.4 inches wide. Finely chop the coriander.
Place in a bowl. Add the lime olive oil, ginger vinegar and lime zest. Mix to combine all ingredients.
Chill for at least 1 hour.
Arrange the ceviche on the plate using a 3.14 inches diameter round cookie cutter. Finish with a few drops of ginger vinegar.
